Prickly dough

  •     1 tbsp wheat flour
  •     1 tbsp sugar
  •     1 tbsp instant yeast
  •     60 ml of warm water

Basic dough

  •     400 ml coconut milk, from 2 coconuts
  •     20 lime leaves
  •     6 pandan leaves, cut into pieces
  •     2 – 3 lemongrass stalks white part, bruised.
  •     1/2 tsp salt
  •     10 egg yolks
  •     250 grams of sugar
  •     150 grams of starch
  •     30 – 50 ml of suji-pandan leaf water


How to make a mini Bika Ambon, typical of Medan, Indonesia
Dough for starters: Mix flour, sugar and instant yeast in a bowl. Add warm water, stir until well blended, leave for about 15 minutes.

Basic dough: Put coconut milk, lime leaves, pandan leaves, lemon grass and salt in a saucepan. Cook over medium heat until it becomes approximately 300 ml of areh, strain and discard the pulp, set aside.

Beat egg yolks with sugar until foamy and thick, add areh / thick coconut milk, starch, yeast mixture and suji-pandan leaf water. Mix by hand, while the dough is patted until it feels light. Set aside for about 2-3 hours until the dough rises.

Preheat the oven on a low heat until it reaches a temperature of 250 degrees C. Grease an oval or circular molded bowl with a volume of approximately 60-75 ml with cooking oil, heat in the oven until it sizzles when dripping with water. Put 3-4 tablespoons of dough into the mold bowl.

Place the mold containing the dough in the oven, leaving the oven door slightly ajar. Bake for about 40 minutes until the surface of the dough has holes, turn off the heat.

Remove the cake from the oven, sprinkle the surface with walnuts, continue to bake over high heat until the surface of the cake is golden brown (approximately 5-10 minutes). Remove the cake from the oven, cool, remove the cake from the mold.
